Almond pie

Ingredients

  • 100 g natural almonds sliced

  • 250 g almond flour

  • 1 tbsp ground flaxseed

  • 4 tbsp hot water

  • 4 tbsp olive oil

  • 1 cup plant-based drink (almond or soya)

  • 1 cup brown sugar

  • ½ cup whole-grain rice flour

  • ½ cup cornstarch

  • 1 pinch sea salt

  • 1 tsp cinnamon

  • 2 tsp baking powder

  • 1 lemon (Zest)

  • 1 tbsp rice syrup

Instructions

  1. In a bowl, mix the ground flaxseed with the hot water. Whisk vigorously until a gel forms.
  2. Add the olive oil, plant-based drink, sugar, rice flour, almond flour, cornstarch, salt, cinnamon, baking powder, and lemon zest.
  3. Mix well after adding another ingredient.
  4. Pour the filling into the pie tin (with baking paper) and sprinkle the sliced almonds on top.
  5. Bake in a preheated oven at 180°C (350°F) for about 30 minutes. Drizzle with rice syrup over the almonds in the last 5 minutes, to caramelise.
  6. Let cool and remove from the tin.
