Almond pie

100 g natural almonds sliced

250 g almond flour

1 tbsp ground flaxseed

4 tbsp hot water

4 tbsp olive oil

1 cup plant-based drink (almond or soya)

1 cup brown sugar

½ cup whole-grain rice flour

½ cup cornstarch

1 pinch sea salt

1 tsp cinnamon

2 tsp baking powder

1 lemon (Zest)

1 tbsp rice syrup
Instructions
- In a bowl, mix the ground flaxseed with the hot water. Whisk vigorously until a gel forms.
- Add the olive oil, plant-based drink, sugar, rice flour, almond flour, cornstarch, salt, cinnamon, baking powder, and lemon zest.
- Mix well after adding another ingredient.
- Pour the filling into the pie tin (with baking paper) and sprinkle the sliced almonds on top.
- Bake in a preheated oven at 180°C (350°F) for about 30 minutes. Drizzle with rice syrup over the almonds in the last 5 minutes, to caramelise.
- Let cool and remove from the tin.
